Vanilla Genoise

A vanilla genoise is a light, airy Italian-French sponge cake made by whipping whole eggs and sugar over a bain-marie to a thick “ribbon stage” (tripled in volume), then gently folding in flour and melted butter.

It is known for its elastic texture, which makes it perfect for soaking in syrups and layering with creams, rather than being eaten plain.
