Recovery: Day 37

On Thursday, day 37 of recovery, Sylvia had two appointments. We went to the physical therapist in the morning. Breakfast was instant oatmeal with some defrosted strawberries. I had a couple of packages to ship out after we got home and then a work order to photograph a house in Franklinton.

For lunch we had leftover Fajitas and Spanish Rice from Wednesday’s dinner. After I drove mama home, I got a second work order to deliver a confidential letter to a residence in Louisburg. The drive was quite long, the house was off the highway about 21 miles away.

Recent Meals

  • Sunday, 20:
    • Breakfast: Waffles
      • I had made a large batch of pancakes and waffles the week before and froze them for later. We had run out of maple syrup quite unfortunately. At Sylvia’s suggestion, I mixed Light Corn Syrup with a touch of Maple flavoring in a small bowl and then stuck it in the microwave to soften up. It wasn’t a great replacement, but it was palatable.
    • Dinner: Beef Stroganoff
      • This was another of mama’s frozen meals. After defrosting it, I just needed to add the cream and some freshly cooked pasta to finish the dish.
  • Tuesday, 22:
    • Lunch: Cheesy Jalapenos and Popcorn
      • I woke up late and missed breakfast. Around lunch time, mama said she was in the mood for Popcorn. I made enough to fill a large bowl. For toppings, in a hot skillet, I combined Salted Butter, Minced Garlic, and Gochujang paste. I drizzled the mix over the popcorn and then mixed it in well. I then sprinkled Spirulina and Nutritional Yeast on top to finish the dish.
      • Sometime later in the day, I worked on prepping the Jalapeno peppers from out garden for freezing. A portion of the batch was set aside for oven roasting. After halving and seeding the peppers, I filled them with cream cheese and sprinkled Sharp Cheddar cheese on top. These went in the oven at 350F for around 15-20 minutes.
      • Sylvia said, for a shorter cooking time, she first broils the peppers face down for about 2-3 minutes, and then adds the cheese before returning the peppers to the oven to bake normally.
  • Wednesday, 23:
    • Dinner: Fajitas with Spanish Rice
      • I used a recipe mama printed out to make the Spanish Rice, for the Fajitas, I followed the instructions on the back of the mix packet. The Spanish rice recipe had me toast Long Grain Rice in a frying pan with some Vegetable Oil until the rice began to turn light brown. I then added a slurry of blended Roma Tomatoes, some onion and garlic, Tomato and Chicken Bullion, a bit of cumin, and 2.5 cups of water to the browned rice. After bring the mix up to a boil, I turned it down to simmer with a lid on for about 23 minutes. After it was done the rice had a lovely orange cast to it.
